  2. Pulping to remove the outer fruit
  3. Multiple fermentation stages lasting 24-72 hours
  4. Thorough washing in clean water channels
  5. Sun-drying for up to 21 days on raised beds

This meticulous approach removes all traces of fruit mucilage, resulting in exceptional clarity which allows the bean's intrinsic flavours to shine through. The extended drying period develops the coffee's full flavour potential whilst ensuring optimal moisture content.

To get the most from your Kenya Nyeri AA:

For Filter Coffee: Use a 1:16 coffee-to-water ratio (e.g., 15g coffee to 240ml water). Water temperature around 93-96°C brings out the bright fruit notes without extracting bitterness.

For Espresso: This coffee shines as a single origin espresso. Try a 1:2 ratio (18g in, 36g out) over 25-35 seconds. The result is a vibrant shot with excellent clarity.
